Where They Grow
Truffles are fungi that live in symbiosis with the roots of specific plants. They grow in pristine woods or in lands abandoned by man for decades, where nature has taken its course.
The truffle is effectively the "fruit" and contains the spores. Its intense and greedy scent is a trick of nature: it serves to attract animals such as foxes, squirrels, badgers, and wild boars, which by feeding on them, disperse the spores ensuring their survival.
How to Cook Them
The White Truffle
Must be used strictly raw. Clean it gently and slice it thinly directly onto hot dishes at the last moment.
The Black Truffle
Expresses its best if creamed for 1-2 minutes at the end of cooking in your sauces or risottos. Then garnish the dish with additional grated or sliced truffle.
Our Story
The tradition of truffle harvesting in Ranzo and Toblino has ancient roots, witnessed since 1600. A passion handed down from generation to generation, in full respect of the rhythms of the earth and the secrets of our woods.
